Occasionally, our chickens cease to produce eggs, yet at other times, we find ourselves dealing with an abundance of them, resulting in a bowl that overflows.
During those prosperous times, it is beneficial to have a repertoire of recipes that are not only simple and quick to prepare, but also nutritious.
I am certainly not a chef, and this platform is not dedicated to sharing cooking recipes.
Over the years, I have collected a variety of simple egg recipes that I thought I would share with you. These recipes are perfect for those occasions when you have an abundance of eggs and your friends and neighbours have politely declined any more.
These dishes are a mirror of my own cultural heritage, drawing inspiration from the diverse places where I have resided: Spain, Scotland, England, and, naturally, Italy. Each recipe is an original creation, either taught to me by friends or adapted with my own personal touch.
